Though I’m sorry to say you cannot exceed the alcohol content of 22% as after than the year just stops working.
2) How much yeast should I use
I suggest using about 15-30 “yeast balls”, if however you want to speed up your fermentation you can use 40-50 yeast balls, but I personally think it’s over kill to use more than 15-30.
